A backpacker’s bite turned forever favourite.
Spicy Garlic Noodles might just be the simplest Asian dish I know — but don’t let that fool you. This fiery, garlicky tangle of noodles has followed me across borders, eaten hot off plastic plates in Bangkok, Jakarta, Saigon… almost every street kitchen has their version.
It’s cheap, cheerful, and ridiculously easy to make — especially if you whip up your own noodles like I do. All you need is pocket change and a craving for something bold, salty, spicy, and comforting.
I learnt to make this years ago, and it’s never left my kitchen since. Whether you’re broke, busy, or just hungry, this is the dish that shows up and delivers.
