Ingredients:
- 2 cups long grain rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes

- 1 tsp ground cayenne pepper
- 1 tsp ground ginger
- Salt and pepper to taste
- 2 tbsp vegetable oil

Method:
1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
2. Add diced red bell pepper to the pot and cook until softened.
3. Stir in smoked paprika, ground cayenne pepper, and ground ginger. Cook for 1-2 minutes to release the flavors.
4. Pour in the can of diced tomatoes and vegetable broth, bring to a simmer.
5. Add washed rice to the pot and season with salt and pepper. Stir well to combine.
6. Cover the pot with a lid and reduce heat to low. Let the rice cook for about 20-25 minutes, or until all liquid is absorbed and rice is tender.

- 2 cups long grain white rice
- 1 pound smoked chicken breast, shredded
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 2 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh parsley for garnish

Instructions:
1. In a large pot, heat the vegetable oil over medium heat. Add the diced onions, bell peppers, and garlic. Saute for 5 minutes until softened.

- 1 lb boneless lamb shoulder, diced
- 2 cups long grain rice
- 1 onion, chopped
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper
- 2 cups chicken broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish

Instructions:
1. In a large skillet or Dutch oven, heat some olive oil over medium-high heat. Add the diced lamb and brown on all sides. Remove the lamb from the skillet and set aside.
