Ingredients:
- 1 cup glutinous rice
- 2 chicken thighs, diced

- 1 tsp sugar

- 1 green onion, chopped
- 1 tbsp vegetable oil

Method:
1. Rinse glutinous rice under cold water until water runs clear. Soak rice in water for at least 2 hours or overnight.
2. In a bowl, marinate diced chicken thighs with oyster sauce, soy sauce, dark soy sauce, sugar, salt, and white pepper for 30 minutes.
3. Heat vegetable oil in a pan over medium heat. Sauté marinated chicken, Chinese sausages, and shiitake mushrooms until chicken is cooked through.
4. Drain soaked glutinous rice and mix with chicken broth.
5. Place a piece of parchment paper at the bottom of a heatproof dish. Layer with a portion of glutinous rice, followed by chicken mixture. Repeat layering until all ingredients are used up.
6. Steam lo mai gai over high heat for 45 minutes or until rice is cooked through.

Ingredients:
- 4 lotus leaves
- 1 cup glutinous rice
- 1 chicken thigh, diced
- 4 dried shiitake mushrooms, soaked and diced
- 1 Chinese sausage, diced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 1/2 tsp sugar
- Salt and pepper to taste

Method:
1. Soak the lotus leaves in hot water for 30 minutes, then rinse and pat dry.
2. Rinse the glutinous rice and soak in water for 2 hours, then drain.
3. In a pan, sauté the garlic until fragrant, then add the diced chicken, mushrooms, and Chinese sausage. Cook until chicken is no longer pink.
4. Add the soaked glutinous rice to the pan, along with soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Stir well to combine.
5. Place a portion of the mixture onto each lotus leaf, then fold into a parcel and secure with kitchen twine.

Ingredients:
- 1 cup glutinous rice
- 1/2 cup diced pork belly
- 1/4 cup diced Chinese sausage
- 1/4 cup diced shiitake mushrooms
- 1/4 cup diced water chestnuts
- 1/4 cup diced scallions
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon sugar
- Salt and white pepper to taste
- 8 lotus leaves (soaked in hot water)

Method:
1. Soak the glutinous rice in water for at least 4 hours or overnight. Drain the rice and set aside.
2. In a large bowl, mix together the diced pork belly, Chinese sausage, shiitake mushrooms, water chestnuts, scallions, soy sauce, oyster sauce, sesame oil, sugar, salt, and white pepper.
3. Divide the soaked lotus leaves into 8 equal portions. Place a portion of the seasoned meat mixture in the center of each lotus leaf, then top with a portion of the soaked glutinous rice.
4. Fold the lotus leaves to form a dumpling, making sure to seal the edges securely.
5. Place the dumplings in a steamer and steam over high heat for 30-40 minutes, or until the rice is cooked through.
