Ingredients:
- 1 cup dried pigeon peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced

Method:
1. Rinse the dried pigeon peas and soak them in water overnight.

- 1 cup dried pigeon peas
- 1 onion, chopped

- 1 scotch bonnet pepper, diced
- 1 tablespoon Jamaican curry powder
- 1 teaspoon thyme
- 1 teaspoon allspice
- Salt and pepper to taste
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- 2 tablespoons fresh cilantro, chopped

Method:
1. Rinse and soak the dried pigeon peas in water overnight.
2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, bell pepper, and scotch bonnet pepper. Cook until the vegetables are softened, about 5 minutes.
3. Stir in the Jamaican curry powder, thyme, allspice, salt, and pepper. Cook for another minute to toast the spices.

- 1 can coconut milk

- 1 tsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 bell pepper, diced
- 1 carrot, diced
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish

Method:
1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
2. Add the curry powder, turmeric, cumin, and coriander to the pot, stirring to toast the spices for about 1 minute.
3. Add the diced bell pepper and carrot to the pot, cooking until they start to soften.
4. Add the dried pigeon peas and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer until the peas are tender, about 45 minutes.
